Summary: Four Sundays, four encounters with a handsome florist who treats you better than your boyfriend ever could. “Lead me not into temptation, I can find it myself.” San’s comment that he’d have been a florist if he hadn’t been an idol was too romantic to not turn into a story.
Sunday, March 7
You’d always had a habit of wandering off on your own. Whether it was hiding behind the bags of rice as a child while your parents did the shopping or being found halfway across the library with a pile of books in your arms, you’d been born curious about the world around you. An open door was an invitation you’d more often than not accept if what was within intrigued you.
Unbeknownst to you, this time it was about to change your life.
You almost tiptoed into the flower shop, not having seen anyone inside, and wondered for a moment if you’d mistakenly walked into someone’s home instead. Wooden shelves were lined with pots of various shapes and sizes, the vines trailing out of some of them sprawling across the windowsill. Wire plant stands were full of succulents and vases overflowed with roses, lilies, and daisies. What appeared to be a park bench along one wall had a basket of chrysanthemums sitting at one end.
“Hello?”
You looked around for signs of non plant life and, not getting a response, tried again. “I’m sorry, the door was open. I’ll come back another time.”
“We’re open until seven the rest of the week,” a voice said from behind the counter along the back wall. “Today it’s six.”
When the owner of the voice stood up, you found yourself wishing he looked more like your grandmother than a male model. Leaving? Did I say I was leaving? Just kidding! “Oh! You—you work here?”
Back when you’d worked in retail, you’d hated that question yet here you were asking it. Way to go. Insert foot in mouth.
He looked around then back at you, his dark eyes taking on a sudden spark of amusement. “No one else has showed up to put the apron on.”
“Sorry, that came out totally wrong. I meant-“
I meant that you look like you should be giving a smoldering glare from an ad in a Seoul subway.
“Yes?”
“I didn’t expect a flower shop to be open on Sundays. Seems like everywhere else here is closed except unless there’s food involved. I’m not used to it.”
“Thought I’d try it for a while to see if it makes a difference. In a small town like this there isn’t much to do so I may as well try to make something of it. Besides, I like being with the flowers. They listen well.”
“Is it true that talking to plants helps them grow?”
“I like to think so.” He chuckled. “And if it doesn’t, at least they don’t seem to mind my trying to carry on a conversation.”
You glanced at his name tag and blushed seeing how fitting it was after your eyes had lingered a little too long on his broad shoulders. San. The word for mountain. Of course it is.
“But I’m sure they’re happy I’m talking to someone else for once.”
You weren’t sure if it was the combined scent of all the flowers making you lightheaded or the rush of seeing an attractive man who wasn’t your boyfriend, but both were for the moment irresistible. So am I.

You didn’t know why you’d decided to visit the flower shop again on White Day of all days. It should’ve been your boyfriend smelling the bouquets of a dozen roses each that lined a shelf in their sparkling cut glass vases, not you. Socially constructed holiday or not, it didn’t feel right.
The problem was that San knew it too.
”Gosh, they’re so pretty. Especially the pink ones.”
“I’ll drop a hint for your someone special if I see him. It’s White Day after all. Tell me what he looks like.”
“He wouldn’t buy these for me.” Your lips pressed into a flat line as you stared at the roses. “Flowers are a waste of money if they’re going to die anyway.”
“The practical type, huh?” San shook his head. “There’s always miniature roses in pots but they aren’t as pretty if you ask me. Don’t get me started on the men that buy their girlfriends a cactus. What does that say about them? You think she’s too sharp to touch?”
You couldn’t help but smile at how worked up he was getting. “Low maintenance.”
“Or is it because women think that wanting more is wrong?”
He might not have meant his words to be so profound, but they gave you pause. Maybe he’s right. Maybe I’ve spent the past three years gaslighting myself into being okay with only getting what I need instead of something I want.
“I should go. It’s getting dark outside.”
“Nothing for you today?”
“Nothing today. Thank you.”
His brow furrowed with concern for a moment before he composed his face into its usual friendly employee expression. “See you around.”
You waved and walked outside, closing the door behind you.
But what is it I want?
You’d moved here so you could move in with your boyfriend, the security of his new job and the promise of a better one for you in a more urban area making you think it was exactly what you needed to get your life together before you turned thirty. You were supposed to be happy. Hopeful for marriage, even. Yet the feeling that something was missing gnawed away at you in those quiet moments beside him in bed, that you’d wandered down the wrong path you didn’t yet realize was a dead end.
“I have got to find another place to lurk before he kicks me out for not buying anything.” You sighed and leaned against the wall outside the shop, watching the sun sink behind the nearby office buildings. “Why couldn’t I avoid going home at a cafe like a normal person?”
“You? Normal?” A familiar voice rang out from the crosswalk followed by laughter. “Since when?”
“Very funny. What, did my other half send out a search party?”
Wooyoung shook his head. “No, I just figured I’d find you here myself. Exactly where I found you last week, the week before, the week before that…”
You rolled your eyes and elbowed him in the ribs, almost sending the iced Americano he held flying. “You made your point. Thanks for not telling on me.”
“What are friends for? I see you resisted the urge to buy another lucky bamboo.”
Wooyoung, one of your few neighbors who gave you the time of day, had quickly become a close friend who could be counted on for three things: good coffee, good gossip, and not telling your boyfriend where you’d been. Everyone else’s tea was free to spill in his opinion and you were grateful he was still keeping a lid on yours.
“I don’t think it’s helping. The money rolls in, the money rolls out to the investment portfolio. We haven’t gone out for dinner in months.”
“He’s not taking you on dates? Stingy.”
“He says it’s for our future. Which I get, but would a little fun kill him?”
“Probably.”
You felt less guilty than usual for laughing. “And then what?”
Wooyoung grinned and jerked his head in the direction of the flower shop. “Run away with the sexy florist and send me a postcard from your honeymoon.”
“Even if I were single—which I’m not—for all I know he isn’t.”
“He is.” Wooyoung sipped his coffee and wiggled his eyebrows. “His sister used to work there and ask him when he was going to get married. I went to school with her.”
“Okay, and for all I know he wouldn’t be interested.”
“You’re lonely, he’s lonely. See, already one thing in common.”
“I feel like you’re ignoring me when I say I’m not single.”
“I promised I’d never tell on you.”
Your face grew hot at the thought of San being the other man in your life and you shook your head to try to dislodge the thought of being kissed on the shop counter. “We should get home before we both get in trouble.”
Wooyoung gestured toward the crosswalk. “After you.”
Sunday, March 21
“I know what day it is…” Wooyoung teased you as you stood next to him sorting your respective loads of recycling. “Let me go with you this time. You can see him and I’ll get some flowers for my mom.”
“You got flowers at the grocery store earlier.”
He looked vaguely offended. “Maybe I wanted to get extra.”
“Don’t take this the wrong way, but it’s easier for me when no one else is around.”
“What? Does he not have other customers at the same time as you?”
You tried to recall if you’d seen anyone else the past two Sundays and paused, crumpled plastic water bottle in hand, when you realized you hadn’t. “Not when I’ve been there.”
“Lucky you, alone with him surrounded by roses. It’s like a drama.”
“And you’re the guy yelling at the TV for the main couple to kiss before the last episode.”
“Hey! Nothing wrong with enjoying a little romance as a man.” He tossed a handful of junk mail into the paper bin. “You smile more on Sundays, you know.”
“Is it that obvious?”
“Yeah.”
“I wish it wasn’t. I’ll only look suspicious.”
“I’d rather you look happy and when you’ve seen him you do.”
You couldn’t help but smile thinking of his soft voice greeting you, the atmosphere of the flower shop almost like a library where neither of you dared disturb the peaceful blooming of the eternal spring inside.
“And there it is. Go on, I’ll finish sorting yours for you.”
“Are you sure?”
He grinned and tossed a milk carton into a bin as if he was practicing a basketball free throw. “Get out of here. You have an appointment to keep.”
Fifteen minutes later, seeing San’s face appear from behind a bucket of lilies, you knew you were exactly where you wanted to be.
Sunday, March 28
San had almost finished closing up the shop that night when he heard a rattling sound behind him, thinking it was a customer who hadn’t bothered to check the hours painted on the front windows. “Sorry, we’re closed.”
The rattling continued and he leaned the broom against the counter with a grumble. “Ah, really…”
“San? It’s me.” You tugged on the door handle and knocked on the glass with increasing desperation. “Please, I need your help.”
At the sound of your voice he turned on his heel and hurried to the door, unlocking it from inside and closing it behind you. “What’s wrong?”
“We had a bad fight and I didn’t know who else to talk to. My one friend wasn’t picking up the phone. I was halfway here when it started raining and I’m so sorry, I know you must think I’m insane.” Rain dripped from your hair on the tile floor and your voice trembled with every word. “Can I stay here until the storm passes?”
“Of—of course. I’ll turn the heat up so you won’t catch a cold.”
You crossed the room to stand by the radiator, holding your hands just above it to chase the chill away until you could feel your fingers again. “That will teach me to leave the house without an umbrella.”
“I’ll be back in a moment.” He unlocked a door just behind the counter and jogged up a flight of stairs you’d never known was there. “Getting something else.”
Whether it was kindness or a practiced efficiency in dealing with sudden calamities, his willingness to help with no questions asked made you want to cry from sheer gratitude. Tears pricked at the corners of your eyes and you wiped them away with your jacket sleeve. He has enough to deal with without seeing me like this.
Minutes later San returned, a mug of steaming tea in each hand and a blanket under one arm. One mug he placed on the counter before handing you the other. “Take this. The chamomile will calm you.”
“And the blanket?”
He unfolded it and draped it around your shoulders. “More warmth. Does that help?”
“A little.” You sipped the tea and felt your shoulders finally release the tension they’d held since you’d left. “If I asked you to try to spend more time with me but your boss wanted to increase your hours, what would you do?”
“Work more during the week to have more weekends free. I take it that wasn’t the answer, however.”
“Would you think it was selfish to ask?”
He shook his head. “Not at all. Relationships take work, you can’t expect the other person to wait for you to schedule them into your life.”
“Thank you. That was all I needed to hear.”
The two of you drank in silence, listening to the tapping of the rain against the tiled roof.
“Funny how you somehow scheduled yourself into mine, now that I think about it. A month of Sundays one by one.” He raised an eyebrow. “Had you not come, I don’t know what I’d have done.”
“Gone home on time?”
San put his mug on the counter with a soft smile. “Yes, but something would have felt like it was missing. I get used to seeing the same people and when I don’t it’s…lonely. I used to think the quiet was nice but I’d rather have you.”
Your heart felt like it rose into your throat so quickly you had to choke it back down, gasping for air in the process.
“Don’t say anything yet or I’ll lose the nerve to do this.”
“Do wh—“
Before you could fully process what was happening his hands were on your hips, lifting you onto the counter with surprising ease. “Do you trust me?”
“Yes.”
“Then close your eyes.”
You did as he asked and felt his breath against your lips for a second before his mouth met yours. Your arms wrapped around his waist, relieved to finally hold him, and pulled him close until he stood between your legs with his chest flush against yours.
“What the hell are we doing?”
He smiled up at you. “Whatever you want.”
Your lips traced from his ear down his neck and he shivered at the feeling, which you took as a sign to continue, repeating the same on the other side. “I haven’t felt this way in so long, I…”
One hand moved to your lower back to rub slow circles at the base of your spine. “What matters is how you feel now. If you want to forget him, forget him.”
“You seem willing to help.”
He laughed softly. “You’re quite a special customer.”
“That must be why you never banned me after a month of barely buying anything.”
“I was worried about you. If I didn’t see you I wondered if you were all right but it wasn’t my place to ask.” San kissed the tip of your nose before kissing you again, this time more gently. “So I’ll wait until you’re ready to tell me.”
Your vision blurred again with barely suppressed tears, unsure of where to begin untangling the way he made you feel from your present situation. I wish it was you I went home to. I wish it was you kissing me hello. I wish it was you on top of me in bed.
“I can’t go back.”
“Neither can I.”
“Then where do we go?”
He was close enough then that his hips were almost aligned with yours, the growing bulge in his jeans easily felt against your stomach. “I think we can stay right where we are.”
You woke up the next morning with only two things on your mind: how good in bed he’d turned out to be and how little you cared that you’d cheated. It was more or less over between us anyway.
San was sound asleep against your side with one arm slung across your torso, his fingers curled around your hip as if he was holding you in place.
I’m just…speeding up the process.
Not that it mattered the morning after, but he really hadn’t left you much of a choice. His kisses hadn’t been so intense that he’d completely broken your resolve. You’d tried—three times, in fact—to slide off the counter and into the night before things went too far. The problem was that each attempt had been met with the same plea murmured in your ear and the same hands beneath your shirt.
“Don’t leave me, I’d miss you.”
And so you hadn’t, wrapping your arms and legs around him to allow him to carry you upstairs to his small apartment above the shop.
“Let’s go to bed. It’s getting late.”
You’d smiled into his neck, knowing odds were good you wouldn’t be sleeping any time soon. “Not even dinner first?”
“I did give you flowers at least,” he’d teased. “Effort to be a gentleman was made.”
As you tried to stretch your legs, which were still heavy from sleep, the soreness between them reminded you of how long it had been since you’d been made to feel it was a good thing. Gentleness had only gone so far before you’d needed more from him—and lucky for you he’d been happy to oblige. “Mm, that was nice.”
San felt your shifting weight on the thin mattress and rubbed his eyes until they fully opened. “What is?”
“Last night. You. It’s been a while since I had any.”
“Me too.“
You moved to lie on your side in order to be face to face with him. “You’re joking. You don’t have women lined up around the block giving you their numbers?”
“None that I was interested in. Besides, until you came along I was always too busy running the shop. I inherited it from my grandfather and didn’t want to ruin his legacy by letting it fail while I went on dates.”
“That explains why I’ve never seen a part timer instead of you.”
He sighed. “It’s the Choi family business to be a workaholic.”
“How long has it been since you took a night off?”
“I can’t remember.”
“Sounds like we both needed it.” Your fingers slowly traced the outline of his abs as he arched his back slightly, evoking a cat enjoying the sun that had begun to shine through the window. “I’m trying to make this part last before I have to make what’s going to be the worst call of my life.”
“Don’t call him. Go home.”
“It’ll be easier if I tell him without seeing his face.”
“If he gets upset and does any damage to anything of yours, you need to be able to gather the essentials and leave.”
You winced knowing he had a point. While your boyfriend had rarely raised his voice at you, he still had a short temper that manifested itself in passive aggression that cut just as deeply. “Where will I go? I have some savings but it’s only enough for a couple of months. He paid most of the rent.”
San brushed your hair away from your face with a smile. “You’ll come back here. I’ll order some food and wait for you. If you’re in danger, you call me or that nosy neighbor of yours to come get you.”
“Wooyoung said your sister used to work here. He knew her from school. Small world.”
“Too small. He’ll be messaging Haneul the second he hears what happened and telling her all about how I finally got a life.” He rolled his eyes. “That’s all he wants, a source of entertainment.”
“He’s already said, and I quote, ‘run away with the sexy florist’. At least we know whose side he’s on.” You kissed the palm of his hand. “He’s been covering for me for a while.”
His ears turned as crimson as the roses on display downstairs. “Sexy?”
“He’s not wrong.”
“In all seriousness, please be safe. I want my flower girl back here in one hour and in one piece.”
Your heart skipped at how casually he’d called you his and for a moment your fear of what was to come disappeared. The future was more blurred than it had been before, but at least for now you could clearly see who would be by your side for it.
“Come to think of it, I never did buy flowers from you this entire time. Even for myself.”
San kissed you deeply. “Too late. I’ll just have to give you enough of them to make up for it.”

wait i was struggling to find anyone else who feels this way about sylus but i’m not so alone now lmaoo… i’m really fascinated with sylus as a character— he’s incredibly sweet despite his image and is so poetic when he expresses his love. his abysm sovereign myth and the entire concept of soul-sharing is peak romance to me. by all estimates i should be utterly obsessed with this guy. but i’m not?? there’s like… this thin sheet of separation between us lol
i really do think it’s mc’s dynamic with him, since she’s a bit different with each guy (and even in each life.) she has this curious nature i identify with more in the GOT and abysswalker myths. she’s insane with caleb sometimes and i’m so immersed because i’m crazy and weird about him too. but i have too many “i couldn’t/wouldn’t do that” moments when im reading sylus’ cards :’) i want to love you so bad sylus!! but our conversations would go nowhere as i could not keep up with you unfortunately! i think im just too awkward and not ambitious enough for him. the n109 zone would chew me up and spit me out. much love though

you really put into words some things i wasn't able to articulate before, thank you so much for that because YES I SHOULD BE OBSESSED WITH THE GUY, WHY AM I NOT??
It's some sort of fascinated disconnect or dissonance. Sylus doesn’t feel like a love interest, I experience him more like an abstract concept. It’s that I feel fundamentally incompatible with the narrative he exists in. I can’t meet him where he is, I’m not wired the way the story needs me to be for him. He feels like a love that requires a sharper version of me — someone with teeth, someone who can spar and seduce and stand their ground. Sylus also is like a character who shines and reveals his layers with a challenge and a push-and-pull dynamic, which MC provides for him, but tires me the fuck out. I'm simply not built that way.
Also, you're so right about the MC point. The only instance the immersion of self-insert shattered for me is when she's with Sylus, her personality and traits also shine the most with him and become distinctive -- because up until that point the other three LIs didn't really challenge her and polarize her like Sylus did.
Though a counterpoint could be made with Caleb as well, she's a certain specific way with him too (spoiled rotten & crazy yes) but it doesn't bring me out of the story. All my fics with Caleb so far has the reader as MC and it's so easy for me to write. I still can't understand what it is with Sylus 😭

My Cousin Rachel 2017 isn't a bad adaptation, I think. It's very faithful. It uses the material from the book well and strategically for its premise, which is that Rachel was innocent, and a combination of Philip's sexual entitlement and emotional immaturity generated his belief in her guilt. It moves around the timing of various letters and events to make its emotional points, which helps, but IMO turns the story into a little bit more of a thriller than the novel was.
In the novel, you have a lot of information about Rachel, Ambrose, the contents of certain letters, her history, etc that you're holding in your head by the time Philip gets sick, so that it feels more weighty and more likely that she's been acting from malice this whole time. Because of the first person narration in the novel, Rachel is very opaque as a character, and it's up to the reader to decide throughout whether or not she's a villain; Philip barely understands her, so you have information coming from his confused perception of her, and then gossip that other characters tell him about her, which forms your picture of her potential motives and characterization.
In the movie, a lot of the ambiguity is shorn away. Rachel is specifically characterized in a way that makes it clear why she and Philip connect; it isn't just that he reminds her of Ambrose, but that she, like Philip, is childlike, silly, and spontaneous. For example, the midnight birthday scene in the novel has Philip sending up the basket of jewels to her window by having her pull it up on a wire, then he climbs up after it, with Rachel inside her room and looking at the basket, not engaged with him. In the movie, he climbs up the vines on the side of the house with the basket of jewels tied around himself. Rachel scolds him that he'll fall and break his neck, but is laughingly throwing things down at him as he comes up.
In trying to clarify an ambiguous and multivalent story, the movie loses some details. For example, the movie doesn't include Philip and Ambrose's family history of brain tumors, which creates ambiguity around each of their illnesses, and contributes to some of the themes of heredity and ancestry in the book. Because of leaving this detail out, Philip's recurrent headaches, mentioned at the end of the movie, seem like a psychosomatic illness, a reflection of his continued pain over Rachel, his confusion over her innocence, and his role in causing her death. It's a good Gothic device and makes sense, it just means something different than it did in the novel.
The movie, like the novel, is very unafraid to talk about sex and its different meaning for men and women. It's also not at all scared to make us wonder if Rachel was ever attracted to Philip. He doesn't come off very well either in the novel or the movie, but it's pretty brave of the movie to do that when usually screenwriters, especially male screenwriters, react to ambiguity by polarizing the characters into Brave Man vs. Evil All-Consuming Vagina. The newer adaptation of Rebecca definitely fell into that trap and really struggled with the difficulty of interpreting Maxim in the source material.
There is some clumsiness in certain choices. For example, in the novel, it is left up to interpretation whether Rachel and Rainaldi were/are lovers, and his supercilious condescension to Philip, with Rachel's apparent choice to ignore/dismiss it, is a huge part of his dislike and distrust of Rainaldi, beyond just the description given by Ambrose in his letters. In the movie, Rainaldi has a much smaller footprint, fewer opportunities to be unlikable, and in order to totally erase the possibility that he's Rachel's affair partner, they insert a line about him being "more Greek than Italian." This is done so that we 100% understand that Philip is deluded... but part of the pleasure of the original story is that you're not supposed to be 100% about anything. (I noticed on Wikipedia that one of the critiques of the movie was that the mystery was too easy to solve--well, if they hadn't erased so much ambiguity from the novel, that wouldn't have happened!)
I do think there's a pacing issue with the movie. It's almost 2 hours long, but it felt to me that events were speeding by at a much faster clip than they did in the novel, and that I was getting less information overall. Having just finished the novel immediately before watching the movie, I didn't feel a huge loss, but I don't know how the movie comes off to people who haven't read the book. I think it ultimately really wanted to be a 6-part BBC miniseries, and that it might have come off stronger as a result. It would have been able to slow down the pacing, deepen the mystery, and give us a sense of urgency about, for example, Ambrose and his illness, and Philip arriving in Italy to find out he's already dead. Ambrose's ghost looms huge in the novel, but is barely present in the movie except for a few key moments.
Casting overall was great. Rachel Weisz and Holliday Grainger were the best and maybe the only logical choices for their characters. Like I genuinely cannot imagine other actors in the roles. I do think that Sam Claflin, who did fine, was too old for the part, even though he was only about 30. A lot is made out of Rachel being older than him--her age is never discussed in the movie, but in the novel, she's 35 while he's 24--and she has a line about him being a wet-nosed puppy, just a young boy. The thing is that he looks like a 30-year-old man. If they'd cast somebody who was Philip's actual age, 25, to a movie-going audience he would have looked like a teenager, which would be exactly right for the character.

Make a moist and decadent chocolate cake in your air fryer. It's quick, easy, and perfect for satisfying your chocolate cravings.
Ingredients: 1 cup all-purpose flour. 1/2 cup granulated sugar. 1/4 cup unsweetened cocoa powder. 1/2 tsp baking powder. 1/4 tsp salt. 1/2 cup milk. 1/4 cup vegetable oil. 1/2 tsp vanilla extract. 1/4 cup chocolate chips.
Instructions: In a mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, and salt. Add milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until smooth. Fold in chocolate chips into the batter. Grease a small cake pan that fits inside your air fryer basket. Pour the cake batter into the greased pan. Preheat your air fryer to 320F 160C. Place the cake pan in the air fryer basket and cook for 20-25 minutes or until a toothpick inserted into the center comes out clean. Remove the cake from the air fryer and let it cool for a few minutes. Carefully remove the cake from the pan and let it cool completely on a wire rack. Serve and enjoy your delicious homemade chocolate cake!

Dangle earrings, or danglers, are basically studs with attachments. Typically,  these involve a jump ring - an additional piece of metal extending downward - that is fastened to the post or closure. The jump ring is also connected to the basket carrying the gemstone.

Drop earrings
Similar to danglers, drop earrings also hang from a stud, but usually tend to be longer and slimmer. Depending on the design, drop earrings consist of two decorative pieces called the upper and lower dangle. The upper dangle hangs from the stud which is attached to the lower dangle with a jump ring.
Hoops 
Hoops, also called clickers, are earrings that are secured by a hinge instead of a clasp. Welcome to the future, where we fry things with air. Breville’s new Joule Oven Air-Fryer Pro is the latest iteration of a countertop oven line celebrated for its reliability and power. It takes its name from the popular sous vide device Joule, and looks to mimic the same precision cookery immersion circulators are known for.
The oven works in conjunction with a new smartphone app (available on App Store and Google Play) to automate entire recipes once it comes time to put your food in the oven. Are these glitzy new features worth shelling out the clams for, or is it mostly hot air? In short: yes. Hot air, after all, is sort of a given when you’re talking about ovens. The regular wire racks can be inserted one of two ways in four different slots, providing up to eight different oven positions to suit whatever recipe you’re making. On the right side of the oven, a large fan helps circulate the air to where it needs to go. The Breville Joule Oven Air-Fryer Pro comes with thirteen different cooking modes, it also works in tandem with a companion app, Joule Oven. Like the Joule Sous Vide app, it’s filled with guided recipes for everything from buttery croissant-style crescent rolls to air-fried buffalo cauliflower wings. Each recipe includes a detailed parts list, prep and cooking time, difficulty, and even serving size. Step-by-step instructions even come with detailed video components so there’s little to no guesswork. When making a recipe, the oven will even help begin the preheating process, an often overlooked step by many home cooks (including myself). Certain recipes take advantage of Joule Autopilot, which cycles any given recipe through different temperatures and modes totally hands off, so you don’t have to futz with the oven until the cooking’s done. Once food is finished, the oven will send an alert to your phone, so you can rush over and pluck your perfectly cooked creations out. Like other countertop ovens in the Breville line, it’s powered by the Element IQ system, which distributes heat around the oven, eliminating cold spots and cooking food a little more precisely than a typical oven.

First Impressions
This oven is big, a real heckin’ chonker. With a device this flashy, I always make sure to actually read the instruction manual, as there’s usually a recommended list of things to do when first firing it up. And considering this is a massive countertop oven with its own smartphone app, there was in fact a setup waiting for me, all of it done through the Joule Oven app. After starting an account, I connected my oven to my home’s WiFi and performed the recommended first firing. After heating the oven empty for a little more than 15 minutes as Breville recommends, the oven was ready to use. 
Breville Joule Oven Air-Fryer Pro boasts many capabilities, but I figured I’d gauge the simple stuff before I dove deep into the fancier features. After letting the oven cool down completely, I timed how long it took to go from zero to 480 degrees Fahrenheit, which is as high as the oven goes. Using the “Bake” function, the oven took almost exactly five minutes to preheat. Not too shabby. But the oven sports multiple functions, so it’s only fair to try out another one. “Air Fry” was next, complete with its convection setting. Once again, it took five minutes to preheat. This oven is consistent and quick when it comes heating up, at the very least.
Truly “Super” Convection
On the right side of the oven is a massive fan which offers two different convection settings, regular convection and “Super Convection.” The latter makes the oven operate a little louder than usual, with a whirring noise that echoed throughout the kitchen as I heated the oven for the frozen french fries to come. “Air frying” is the most clever marketing term since “blast processing.” These devices are little more than small ovens with big fans. And while air frying isn’t nearly as delicious as anything deep fat fried, it’s still something I do at least a few times a week. It’s easy, it’s quick, and when done right, incredibly satisfying. Breville Joule Oven Air-Fryer Pro comes with a fryer basket, which is a must for any device with “air fryer” in its name. These baskets allow for hot air to come at food from all sides, which is essential if crunchy food is your aim. After laying out some frozen french fries in a single layer, I slid the basket into the center of the oven, which was on full blast, 480 degrees.
Most countertop air fryers are enclosed, so you can’t watch your food cooking and check on the progress of it becoming golden brown and delicious. But that’s not the case with the Joule Oven. Watching french fries through the big glass screen on the Joule oven was mesmerizing. The “Super Convection” fan made the small amount of fat on the fries bubble up, like it was actually being fried. After eight minutes and a quick shake of fry seasoning, I scarfed down the best batch of air-fried potatoes I’d ever eaten. Later on that evening, I tried to see if other frozen favorites like mozzarella sticks and chicky nuggies would render similarly tasty results. Luckily, they did. “Super Convection” is no joke. Because the air circulates quicker with “Super Convection” I can’t imagine never not using it whenever a convection setting is called for in a recipe, especially in air frying.

Highs and Lows
Countertop ovens are great at dishing out energy a little more efficiently. After all, whenever you make a batch of cookies, how much of your oven is actually used? I’d bet less than 30 percent of the given space. That’s a lot of wasted energy, not to mention time. That said, on the whole, the oven on your stove can get as hot as 500 degrees, sometimes as high as 550 degrees Fahrenheit. And while the Breville Joule Oven Air-Fryer Pro doesn’t reach these high temps, it does go very, very low. As low as 85 degrees Fahrenheit, in fact.
If you try to dehydrate meat or fruit inside a regular oven, there’s a good chance you’re cooking it, not drying it out. When buying groceries, I tend to overbuy fresh fruit, with every intention to start a habit of health-conscious snacking. While bananas haven’t spoiled in my kitchen in months, there’s always a stray pineapple or mango that goes ignored until it’s within a day of spoiling. Using the air-fryer basket, thin slices of almost rotten fruit become properly dehydrated within a few hours. The “Dehydrating” function on the oven runs a little hot for my taste, but The Breville Joule allows you to adjust the heat on any setting. The “Super Convection” function helps circulate the air, turning fruit into delicious leather in as little as three hours. 
The oven also comes with a non-stick pizza pan, which is a fantastic accessory. It makes perfect Toll House cookies straight from the fridge, and because it’s non-stick, also works as a surface for nachos, disco fries, croque monsieurs, or anything smothered in cheese, without the need to waste aluminum foil. What it’s not good for is actually making pizza, that is, unless you like your pizza on the blonde and saggy side. Non-stick surfaces just don’t dish out heat very well. Sadly, my 14-inch cooking steel (my go-to must-have pizza pal) didn’t fit in the oven. Luckily, my versatile cast-iron griddle did. Breville Joule Oven Air-Fryer Pro made pizzas as good as my big oven, granted, a little smaller. The cast-iron griddle in conjunction with the “Pizza” function on 480 degrees Fahrenheit dished out enough heat for a nice charred crust with a satisfying crunch. And without heating up the entire kitchen, no less. 
Joule App Capabilities and Pratfalls
Many kitchen appliance smartphone apps are afterthoughts, a cynical selling point that usually doesn't amount to much more than heartache. I went in with hope, considering this is the second device bearing the name Joule. The Joule Sous Vide app is what makes that immersion cooker so perfect, with built-in recipes, guided videos, and alerts to keep you connected with your food every step of the cooking process. The Joule Oven app works similarly, complete with a bounty of recipes. Every recipe listed includes cooking time, serving size, and a visual parts list, which automatically makes it one of the best cooking apps available. After surfing through the available recipes, I had to try one that took advantage of Breville Joule Oven Air-Fryer Pro’s smart capabilities: Set-It-and-Forget-It Rotisserie-Style Chicken.
The app promises a chicken with a juicy interior and golden skin, much like the kind that gets folks to splurge on a Costco membership. After gathering the ingredients, I got to work, following the guided recipe to the tee. I was immediately annoyed that I had to truss the bird. Handling raw poultry is one thing, but wrestling with string is a whole other one. I can’t trust to save my life, which is why I typically take the “Mortal Kombat” approach with birds and rip out the spine, which in my opinion, is much easier than fumbling around with knots. Was it impossible? Of course not. What was annoying was something I didn’t account for: time. The bird would take five hours to cook. However, it truly was a set-it-and-forget-it experience. After seasoning it, I shoved it in the oven and using the patented “Autopilot” mode, let the oven do the rest. 
It was interesting watching the Joule Oven cook. Harnessing highs and lows of temperature, it more or less mimicked the way a rotisserie works. Yes, it took five hours, but the results spoke for themselves. After a quick temping of the dark meat, I let the bird rest for fifteen minutes. Then, despite having already eaten dinner, my partner and I devoured half the bird over the counter it was resting on. It was perfectly cooked, even though it required cumbersome string and the equivalent run time of one-and-a-half “The Godfather” films to cook. 
There’s one thing about the app that I do find a bit annoying. You can turn the oven off using the app, but you can’t turn it on. And unless you’re using a recipe, you can’t even set a temperature for the oven to preheat to. Turning on the oven must be done manually. A safety issue, I imagine, but similar “smart” ovens let you turn the oven on via the app. I’d love to place sliced milk bread slices in at night and set the oven to toast as I slink out of bed and brush my teeth, so breakfast is waiting for me by the time I trudge into the kitchen. Despite these minor gripes, I’m excited to see more recipes roll out from the app and try them out. 
A Few Other Fabulous Features
I’ve used a handful of other countertop ovens and as flashy as they are, there are some things that are often overlooked. No appliance, no matter how smart, is worth using if it’s difficult to clean and maintain. Anytime I cook chicken thighs, bacon, or other splattery foods, I let the oven cool down completely, and wipe it down with a towel barely wet with all-purpose surface cleaner. The non-stick interior is a godsend, and there’s a good chance I won’t ever have to break out the Easy Off to keep the Breville Joule Oven Air-Fryer Pro pristine. Unlike similarly-sized ovens, the door is incredibly easy to clean as well. I took a lot of joy watching food as it cooked to perfection. And the incredibly bright oven light makes everything made in the oven camera-ready, in case you want to flex on the haters for your Instagram.
Other ovens in Joule’s class cynically make you buy extra accessories to take advantage of all features. Breville Joule Oven Air-Fryer Pro comes with two oven racks, an air-fryer basket, a non-stick pizza pan, and even a broiler pan complete with rack, everything you need to put this machine through the ringer. And because the inside of the oven is so spacious, it can fit oven-ready cookware you already own. My four-quart Staub enamel dutch oven fits with room to spare on all sides, even with its lid.
Breville Joule Oven Air-Fryer Pro Review: Final Thoughts
The second, in what I hope eventually becomes a long line of kitchen appliances bearing the name “Joule,” is a resounding success. This oven is large enough to compete with your main oven, and is a good bit smarter too. After almost three weeks of intense use, I’ve started using my main oven to store extra pots and pans. Its lows are gentle enough to proof bread and dehydrate fruit, and its highs are enough to dish out surprisingly good pizza. While it’s great alone, pairing it with the Joule Oven App unlocks serious precision potential, and with guided video instructions, you may even pick up a few skills along the way.
